- 10 slices bacon
- 3 large potatoes, cut into bite-sized pieces
- 1 onion, chopped
- 8 eggs, beaten
- salt and pepper
- 1 c. Cheddar cheese, grated
Directions

1In a large skillet, cook bacon until crisp.

2Remove and drain on paper towels.

3Crumble and set aside.

4Brown potatoes and onion in bacon drippings.

5Drain off excess fat.

6Add beaten eggs, salt and pepper.

7Cook slowly, stirring until eggs are almost done. Sprinkle cheese over top. Cover with lid and warm to melt cheese. Serve hot with toast and jelly.
