- 1 c. cornmeal
- 1 1/2 c. boiling water
- 1 Tbsp. softened butter
- 3 eggs, separated
- 1 c. buttermilk
- 1 tsp. salt
- 1 tsp. sugar
- 1 tsp. baking powder
- 1/4 tsp. baking soda
Directions

1Put cornmeal in a large bowl. Stir in boiling water.

2Continue to stir until cool to prevent lumping.

3Blend in butter and egg yolks.

4Stir in buttermilk, salt, sugar, baking powder and baking soda.

5Beat egg whites until soft peaks form.

6Fold into cornmeal mixture.

7Pour into greased 2-quart casserole. Bake in moderate oven at 375° for 45 to 50 minutes. Serve at once with butter. Makes 8 servings.
