Farro Salad

Ingredients

  • 4 cups water
  • 12 oz farro
  • 2 t salt
  • 1 lb tomatoes chopped
  • 1/2 finely chopped sweet onion
  • 1/4 c diced chives
  • 1/4 c finely chopped parsley
  • 1 large garlic clove smashed
  • 2 T balsamic vinegar
  • 1/4 c extra virgin olive oil
  • Fresh groung pepper

Directions

    Combine water, salt and farro. Bring to a boil over high heat and reduce to medium low. Cover saucepan and simmer for 15-20 minutes.

    Drain well. Add tomatoes, onions, chives, parsley and toss.

    Whisk together olive oil, vinegar, garlic, salt and pepper in a bowl. Add to salad and combine. Serve at room temp
