- 4 cups water
- 12 oz farro
- 2 t salt
- 1 lb tomatoes chopped
- 1/2 finely chopped sweet onion
- 1/4 c diced chives
- 1/4 c finely chopped parsley
- 1 large garlic clove smashed
- 2 T balsamic vinegar
- 1/4 c extra virgin olive oil
- Fresh groung pepper
Directions

1Combine water, salt and farro. Bring to a boil over high heat and reduce to medium low. Cover saucepan and simmer for 15-20 minutes.

2Drain well. Add tomatoes, onions, chives, parsley and toss.

3Whisk together olive oil, vinegar, garlic, salt and pepper in a bowl. Add to salad and combine. Serve at room temp
