- 2 c. shredded hash browns
- 1 (10 oz.) can tomatoes, diced with green chilies, drained
- 1/2 lb. cheese spread (Velveeta works great), cut up
- 6 eggs

1Brown sausage; drain.

2Add potatoes and tomatoes; cook over medium heat 5 minutes.

3Top with cheese.

4Beat eggs and 2 tablespoons water.

5Pour over ingredients in skillet; cover and reduce heat to low.

6Cook 10 to 12 minutes or until egg mixture is set in center and cheese is melted.

7Uncover; let stand 5 minutes before cutting into wedges.
