- 2 eggs
- 1 tablespoon butter or ghee
- 3 slices bacon cut up in 1 inch strips
- 2 tablespoons grossly chopped zucchini
- 1 ounce crumbled blue cheese
Directions

1Using preferably a non-stick pan, melt your butter or ghee adding the bacon and zucchini, cooking at medium/ high heat till bacon and zucchini are almost done.

2Throw in your eggs that you have already whisked while your pan is sizzling.

3Let them cook until almost done in the mode of an omelette and add that tangy blue cheese over. Fold and serve.
