Fast Feijoada

Ingredients

  • 3 Cans of Black Beans
  • 3 Cups of White Rice
  • 2 TBPS Garlic
  • 2 Bay Leaves
  • 2 Tomatos
  • 1 Onion
  • 2 Cups Vinegar
  • Salt
  • Pepper
  • 1 Orange
  • I package sausage, sliced into bite size pieces

Directions

    Add beans, garlic, bay leaves, and sausage to a pot. Bring to bil and let simmer for about an hour.

    Chop tomatoes and onion and mix in a serving bowl with salt and pepper to taste. Pur vinegar over the top and set aside.

    Slice the orange and place on a side plate.

    Once the beans have simmered for an hour or so place desired amount of rice in a bowl. (This grows so I usually put in a lot less rice than I think I will eat). Ladle beans over rice. Put a few spoonfuls of the vinegar mixture over the beans and top with a slice or two of orange. Mix together and enjoy.
