- 1 (16 oz.) can sliced beets
- 1/4 c. sugar
- 1 heaping tsp. cornstarch
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/4 c. vinegar
- 1/4 c. thin onion, sliced
Directions

1Drain beets and save juice.

2Combine beet juice and water to make 1 cup liquid.

3In a 1-quart glass bowl, combine sugar, cornstarch, vinegar, salt and pepper.

4Stir in beet liquid.

5Cook for 3 minutes in microwave.

6Add beets; stir and cook an additional 5 minutes.
