Ingredients

  • 1 onion, chopped
  • 1 rib chopped celery
  • 1/2 to 1 green pepper, chopped
  • 1/2 tsp. oil
  • 1 can tomatoes, chopped
  • spaghetti (enough for 3 or 4 people)
  • salt and pepper to taste
  • 1/2 tsp. curry
  • 1/2 tsp. oregano
  • 1/2 tsp. basil
  • 1/4 c. dried mint

Directions

    Heat and saute onion, celery and green pepper in oil.

    Add chopped tomatoes and spaghetti.

    Add remaining ingredients and any other spices you like.

    Stir well.

    Cover and cook over low flame about 30 minutes.

    Add water as necessary until spaghetti is al dente.

    Serve with grated cheese, Italian bread and a salad.
