- 1 1/4 c. cornmeal
- 1/3 c. whole wheat flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. grated carrots
- 1 Tbsp. apple juice concentrate
- 1 c. nonfat buttermilk
- 2 egg whites
Directions

1Preheat oven to 350°.

2Use an 8-inch square nonstick pan, or a regular pan coated with a nonstick cooking spray.

3In a medium bowl, combine cornmeal, flour, baking powder and baking soda.

4In a small bowl, beat egg whites until foamy.

5Add to flour mixture and blend thoroughly.

6Pour into pan and bake for 20 to 25 minutes, or until springy to the touch.
