Ingredients
- 6 c. water
- 3/4 c. rice (preferably Arborio or other short-grain rice)
- 3 c. nonfat milk
- dash of salt
- 4 1/2 Tbsp. sugar
- 1/4 c. raisins or dried cherries
- 1 1/2 tsp. vanilla
- ground cinnamon for sprinkling (optional)
Directions

1Bring 6 cups water to boil in large, heavy saucepan.

2Add rice and boil, uncovered, 7 minutes.

3Drain well.

4Bring milk to boil in same saucepan over medium-high heat, stirring occasionally.

5Add rice and salt.

6Cook, uncovered, over medium-low heat, stirring often, until rice is very soft and absorbs most of the milk, about 15 minutes.

7Rice should look creamy, not soupy and not dry.

8When rice is cooked, stir in sugar.

9Cook and stir 1 minute.

10Remove from heat.

11Stir in raisins and vanilla.

12Serve warm, sprinkled with cinnamon.
