Ingredients
- 1 eggplant, medium sized
- 4 slices bacon
- 12 cup minced onion
- 12 cup green pepper, chopped
- 4 cups canned tomatoes, drained
- 1 cup drained tomato juice
- 12 cup celery, diced
- salt and pepper
- 1 dash oregano
- 1 cup mixed mushrooms
- 12 cup parmesan cheese, grated
Directions

1Wash, skin and cut up eggplant into cubes.

2Mince bacon and heat in skillet.

3Add onion and pepper and saute until bacon is done.

4Add eggplant, tomatoes, juice and celery.

5Simmer until tender.

6Put mixture in casserole dish and season with salt, pepper and a dash of oregano.

7Fold in mushrooms and sprinkle parmesan cheese on top.

8Bake at 350 degrees for 20 minutes.
