Favorite Eggplant Casserole

  • 1 eggplant, medium sized
  • 4 slices bacon
  • 12 cup minced onion
  • 12 cup green pepper, chopped
  • 4 cups canned tomatoes, drained
  • 1 cup drained tomato juice
  • 12 cup celery, diced
  • salt and pepper
  • 1 dash oregano
  • 1 cup mixed mushrooms
  • 12 cup parmesan cheese, grated

Directions

    Wash, skin and cut up eggplant into cubes.

    Mince bacon and heat in skillet.
  3. 3
    Add onion and pepper and saute until bacon is done.

    Add eggplant, tomatoes, juice and celery.

    Simmer until tender.

    Put mixture in casserole dish and season with salt, pepper and a dash of oregano.

    Fold in mushrooms and sprinkle parmesan cheese on top.

    Bake at 350 degrees for 20 minutes.
