- 1 quart buttermilk
- 1/4 cup kosher salt
- 2 tbsp thyme
- 2 tbsp oregano
- 1 tbsp hot pepper sauce
- 2 clove garlic, smashed
- 6 lb chicken, about 16 pieces
- 4 cup flour
- 1 tbsp sweet paprika
- 1 tbsp black pepper
- 1 vegetable oil
Directions

1whisk buttermilk, hot sauce, garlic, salt, thyme, oregano together in large bowl.

2put chicken in mixture, cover and refrigerate overnight

3shake flour, paprika and pepper in large ziplock bag.

4set a metal rack on a baking sheet.

5shake 2-3 pieces at a time in closed bag.

6set on rack.

7set another rack on a baking sheet.

8heat 3/4 in oil in 2 heavy skillets.

9oil should heat to 340 or bubbling lightly around chicken when its added.

10add white meat in one pan and dark in the other.

11fry about 10 minutes on each side until golden brown, 15 minutes for the dark meat.

12transfer chicken to clean rack.

13serve hot.
