Favorite Rice Casserole

Ingredients

  • 4 Tbsp. margarine
  • 1 c. chopped onion
  • 4 c. freshly cooked rice (not instant)
  • 2 c. sour cream
  • 1 c. cream-style cottage cheese
  • 1 large bay leaf, crumbled
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 3 (4 oz.) cans chopped green chilies, drained
  • 2 c. grated sharp Cheddar cheese
  • chopped parsley

Directions

    Melt butter in large skillet.

    Saute onion until golden. Remove from heat; stir in hot rice, sour cream, cottage cheese, bay leaf, salt and pepper; toss lightly to mix well.

    In a greased 8 x 12-inch baking dish, layer half the rice mixture, then half the chilies, then sprinkle with half the cheese.

    Repeat.

    Bake, uncovered, 25 minutes, or until bubbly and hot.

    Sprinkle with chopped parsley.
