Ingredients
- 1 large potato, peeled and cut into chunks
- 1/3 c. sugar
- 1/4 c. butter
- 1 tsp. salt
- 1 pkg. yeast
- 1 egg
- 3 1/4 to 3 3/4 c. flour
Directions

1Cook potato in boiling water until done.

2Drain and reserve 3/4 cup liquid.

3Mash potato.

4Set aside 1/2 cup.

5In large bowl combine potato water, sugar, butter and salt.

6Let stand until butter is melted and mixture is warm.

7Add yeast.

8Let stand until softened.

9Beat in egg and potato.

10Stir in as much flour as you can.

11Knead 3 to 5 minutes to make medium soft dough.

12Put in greased bowl.

13Let rise until doubled.

14Punch down and roll out on floured board to 1/2-inch thickness.

15Cut with 3 inch cutter. Place 1/4 inch apart on cookie sheet.

16Let rise 30 to 40 minutes. Bake at 350° for 18 to 20 minutes until brown.
