- 6 small fennel bulbs (about 2 lb.), halved
- salt and freshly ground pepper
- 1 c. chicken broth
- 1/2 c. grated Parmesan cheese
- 3 Tbsp. butter
Directions

1Preheat the oven to 400°.

2Butter a 9 x 12-inch baking dish. Blanch the fennel for 12 to 15 minutes and drain.

3Arrange cut side up in the baking dish.

4Season to taste and pour the chicken broth over.

5Sprinkle with the cheese.

6Dot with butter and bake in the upper third of the oven for half an hour or until the top is golden.

7Serves 6 to 8.
