  • 2 c. mashed, cooked carrots (about 2 lb.)
  • 1 c. cracker crumbs
  • 1 c. milk
  • 3/4 c. grated sharp Cheddar cheese
  • 1 1/3 c. soft butter
  • 1/4 c. grated onion
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 3 eggs
  • 1/8 tsp. cayenne pepper
  • 2 (10 oz.) pkg. frozen peas, cooked (garnish)

    Combine carrots, crumbs, milk, cheese, butter, onion and seasonings.
