- 4 c. thinly sliced onions (3 medium)
- 2 Tbsp. butter
- 1 c. half and half or light cream
- dash of salt and pepper
- 1/3 c. grated Parmesan cheese
- 2 eggs
Directions

1Melt butter in a large saucepan.

2Stir in onions.

3Cook, covered on medium low heat for 8 to 10 minutes or until tender and golden, stirring constantly.

4Divide onions evenly among 6 (6 ounce) individual casserole or custard cups.

5Beat eggs until light.

6Stir in half and half, salt and pepper.

7Pour atop onions or place in 8 x 8 x 2-inch baking dish and pour mixture atop.

8Bake in 350° oven for 15 minutes or until mixture is set (allow 15 to 20 minutes for onions in baking dish).

9Sprinkle with cheese last 5 minutes of baking.
