Fettucini Carbonara

Ingredients

  • 1 lb. fettucini
  • 1 lb. maple flavored bacon
  • 1/2 lb. Prosciutto ham, cut in 1-inch sq. (optional)
  • 3 cloves garlic, diced
  • 2 Spanish onions, chopped
  • 1/2 c. grated Parmesan
  • 1/2 pt. half and half
  • 2 eggs
  • desired seasonings (oregano, basil, Italian seasoning, chives or pepper)
  • 1/4 lb. butter (or more)
  • olive oil

Directions

    Microwave bacon until crisp; keep to the side.

    In frying pan, saute onions in olive oil over medium heat.

    Add desired seasonings and garlic.

    Add Prosciutto and cook to desired level of crispness.

    I usually cook for 1/2 hour and then turn down to low heat.

    In a separate pan, fry eggs hard.

    Remove and chop; add to onion mixture.

    In a bowl, mix cream with Parmesan.

    Beat until mixture is of milk shake thickness.
