Directions

   Heat oil in skillet, add uncooked fideo coils or angel hair nests.

   Saute over medium heat until browned on both sides.

   Remove and drain on a paper towel.

   Saute onions, garlic, and carrots until onions are slightly transparent.

   Add tomato sauce and tomatoes; cook 3-5 minutes.

   Add sauteed coils or nests and chicken broth; bring to a boil.

   Reduce heat and simmer covered for 20 minutes, do not remove cover during simmering.

   Sprinkle cheddar cheese over top and cover to melt.
