  • 1 (8 oz.) pkg. vermicelli (fideo)
  • 1/4 c. salad oil
  • 1 medium onion, finely chopped
  • 1 clove garlic, minced
  • 1 (16 oz.) can tomatoes
  • 1 (10 oz.) can chicken broth
  • salt and pepper to taste
  • 1 Tbsp. cumin powder

Directions

    Saute vermicelli in oil until light brown. Drain on paper towels.

    Place in casserole. Brown onion and garlic.

    Add tomatoes and broth. Add salt, pepper and cumin.

    Cover the vermicelli with sauce.

    Cover the casserole and bake at 350° for 1 hour, adding more broth as liquid is absorbed.
