Ingredients

  • 1 lb. pork sausage
  • 1/4 lb. fresh mushrooms, sliced
  • 1 medium onion, chopped
  • 8 to 10 eggs
  • 1/4 cup sour cream
  • salt and pepper
  • 1/2 cup salsa
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • 2 cups VELVEETA Mild Mexican Shredded Pasteurized Prepared Cheese Food

Directions

    Cook sausage, mushrooms and onion in a large skillet until sausage is cooked through.

    Drain; set aside.

    Combine eggs and sour cream in medium bowl; season to taste with salt and pepper.

    Whip egg mixture in blender for 1 minute; then pour into 13x9-inch baking dish.

    Bake in preheated 400F oven for 5 to 8 minutes or until mixture is softly set.

    Spoon salsa over top of egg mixture.

    Spread sausage mixture over top.

    Sprinkle with cheeses and VELVEETA.

    Refrigerate until 30 minutes before serving time.

    When ready to serve, bake in a 325F oven for 30 minutes.
