  • 1 (20 oz.) can crushed pineapple (undrained)
  • 2 c. self-rising flour
  • 2 c. sugar
  • 1 c. nuts, chopped (pecans or walnuts)
  • 2 tsp. soda
  • 2 eggs (unbeaten)
  • 8 oz. cream cheese
  • 1 stick margarine
  • 2 c. confectioners sugar
  • 1 tsp. coconut flavoring

Directions

    Mix all ingredients by hand until well blended. Bake at 350° for 25 to 30 minutes in 9 x 13 pan (Pam greased). Blend cream cheese, margarine, confectioners sugar and coconut flavoring. When cake is cool spread over cake.
