- 1/3 c. melted shortening
- 1 c. self-rising cornmeal
- 2 eggs, beaten
- 1 tsp. salt
- 3/4 c. sour cream
- 1 small onion, chopped
- 4 or 5 finely chopped jalapeno peppers
Directions

1Preheat oven to 400°.

2Pour shortening into 10-inch iron skillet and place in oven to heat.

3Combine remaining ingredients, mixing well.

4Pour all but 2 tablespoons of heated shortening into cornmeal mixture; mix well.

5Pour batter into hot skillet and bake for 35 minutes or until golden brown.
