Ingredients

  • 1 (12 oz.) pkg. rotelle pasta, cooked, drained and cooled
  • 1 c. diced red onion
  • 1 c. diced red pepper
  • 1 (8 oz.) can corn
  • 1 (4 to 7 oz.) can Ortega diced green chilies
  • 1 to 2 Tbsp. Ortega diced jalapenos
  • 1/4 c. chopped fresh cilantro or parsley
  • 1 c. prepared Italian salad dressing
  • 1 Tbsp. chili powder
  • 1 to 2 tsp. ground cumin

Directions

    In large bowl, combine pasta, onion, red pepper, corn, chilies, jalapeno and cilantro or parsley.

    In small bowl, whisk together salad dressing, chili powder and cumin.

    Pour over pasta mixture, tossing to coat well.

    Chill at least 30 minutes to blend flavors before serving.
