- 2 c. chopped onion
- 1/4 c. butter
- 4 c. uncooked long grain rice
- 2 (8 oz.) cans pitted ripe olives, drained
- 2 (28 oz.) cans tomatoes, with liquid, cut up
- 1 c. chopped green pepper
- 1 Tbsp. salt
- 1 to 2 tsp. chili powder
- 1 tsp. dried oregano
- 1/2 tsp. pepper
- 4 c. water
- 3 c. (12 oz.) shredded Cheddar cheese
Directions

1In skillet over medium heat, saute the onion in butter until tender.

2Transfer to a large bowl.

3Stir in the next 9 ingredients. Divide between two ungreased 13 x 9 x 2-inch baking pans.

4Cover and bake at 350° for 1 1/2 hours.

5Uncover.

6Sprinkle with cheese. Return to oven for 5 to 10 minutes or until cheese melts.
