- 16 ounces whole wheat rotini
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- 1 medium onion, chopped
- 1 large zucchini, diced
- 13 cup pepperoncini pepper, chopped
- 2 tablespoons chili powder
- 1 (14 1/2 ounce) candiced tomatoes and green chilies, undrained
- 12 cup pitted black olives, chopped
- grated parmesan cheese, as desired
Directions

1Cook the rotini according to package directions.

2Meanwhile, in a large skillet, heat oil over medium heat.

3Saute the garlic and onions.

4Add zucchini and peppers, cook 5 minutes or until vegetables are tender, stirring occasionally.

5Add the chili powder, tomatoes with diced green chiles and olives, and bring to a boil.

6Reduce heat to low.

7Simmer uncovered 10 minutes, stirring frequently, until mixture thickens.

8Add rotini to vegetables.

9Mix well.

10Sprinkle with parmesan cheese, if desired.
