- 2 Tbsp. olive oil
- 1 lb. zucchini (about 3), quarter lengthwise and cut crosswise into 1/2-inch pieces
- 3 garlic cloves, minced
- 1/2 tsp. dried oregano, crumbled
- 1/2 c. salsa
- 1/2 c. shredded Monterey Jack cheese
Directions

1Heat oil in heavy medium skillet over medium-low heat.

2Add zucchini, garlic and oregano and saute until just golden, about 2 minutes.

3Add salsa and simmer until zucchini is just tender, about 6 minutes.

4Reduce heat to low.

5Sprinkle cheese over zucchini.

6Cover and cook until cheese melts, about 2 minutes. Yield: 4 servings.
