Ingredients

  • 1 gal. boiling water
  • 1 c. soda
  • 2 gal. figs (with stems left on)
  • 3 c. sugar
  • 1 ginger root, sliced
  • 2 lemons, sliced or 1 orange, sliced

Directions

    Dissolve soda in boiling water; place figs in a large kettle, then pour soda water mixture over the figs. If soda water does not cover figs, add enough water to cover. Soak for 10 minutes. Drain and rinse figs with fresh water. Add 3 cups of sugar, poured over top of the fruit.
