Ingredients

  • 3 lb. shrimp, peeled and deveined
  • 1 1/2 lb. smoked sausage
  • 1 1/2 lb. hot sausage
  • 20 chicken wings
  • 1 lb. ham, cubed
  • 3 cloves chopped garlic
  • 1 gal. water or chicken broth
  • 1 doz. blue crabs, cleaned
  • 1 large chopped onion
  • 1 bunch chopped shallots
  • 5 to 6 sprigs chopped parsley
  • 2 Tbsp. seasoning salt
  • 1 tsp. pepper
  • 1 c. cooking oil
  • 1 c. flour
  • 2 to 3 oz. file

Directions

    Fry sausage for 10 to 12 minutes.

    To remove excess fat, drain, slice and set aside.

    Cut tips from chicken wings. Sprinkle with salt and brown on all sides; set aside.
