  • 1 5/8 cups cherry tomatoes
  • 4 Hellmann''s Light Mayonnaise dollops*
  • 2 aubergines
  • 1 green pepper
  • 2 tablespoons parsley

Directions

    Preheat the oven to 180°C.

    Cut the aubergines in half and bake them for around 30 minutes in the oven at 200°C.
  3. 3
    Scoop out the innerside of the aubergine and keep the outer.
  4. 4
    Mix the parsley and mayonnaise with the aubergine, the tomatoes and pepper.
  5. 5
    Fill the outside of the aubergine with the mixture and bake in the oven for 20 minutes.
