- 1 5/8 cups cherry tomatoes
- 4 Hellmann''s Light Mayonnaise dollops*
- 2 aubergines
- 1 green pepper
- 2 tablespoons parsley
Directions

1Preheat the oven to 180°C.

2Cut the aubergines in half and bake them for around 30 minutes in the oven at 200°C.

3Scoop out the innerside of the aubergine and keep the outer.

4Mix the parsley and mayonnaise with the aubergine, the tomatoes and pepper.

5Fill the outside of the aubergine with the mixture and bake in the oven for 20 minutes.
