Filled Ham Schnitzel

- 1 (6 oz.) can chopped mushrooms, drained and finely chopped
- 3 Tbsp. butter
- 2 Tbsp. snipped parsley
- 1 Tbsp. all-purpose flour
- 6 slices boiled ham (fairly thin)
- 1 slightly beaten egg
- 1/2 c. all-purpose flour
- 1/2 c. fine dry bread crumbs
- 3 Tbsp. shortening
Directions

1Brown mushrooms in butter with parsley.

2Add 1 tablespoon flour; cook and stir for 2 minutes.

3Cool.

4Spread mixture on 1/2 of each slice of ham.

5Fold other half over; press to secure.

6Dip schnitzel in eggs, then in 1/2 cup flour.

7Put back into egg and then into crumbs.

8Brown on both sides in hot shortening.
