  • 1 can red, tart cherries
  • 3/4 to 1 c. sugar
  • 4 Tbsp. flour
  • 1/2 tsp. cinnamon
  • 1/2 c. juice (from draining cherries)
  • 1 Tbsp. butter
  • 3 drops red food coloring
  • 1/4 tsp. almond extract

    Drain cherries into separate bowl.

    Put cherries and all ingredients, except butter, into saucepan.

    Cook slowly until thickened.

    Pour into unbaked 9-inch pie shell.

    Add pieces of butter.

    Top with lattice top.

    Bake as usual.
