- 1 tbsp extra virgin olive oil
- 3 None free-range eggs
- 1 tbsp milk
- 1 tbsp heavy cream
- 1/2 tbsp fresh fines herbes, finely chopped
- None None watercress, for garnish
Directions

1For each omelette, heat oil in a small frying pan over medium heat. Whisk together eggs, milk, cream and herbs. Season. Pour egg mixture into pan, swirling mixture to cover base. Using a spatula, start folding in sides of omelette and gradually roll up. (This should take around 2-3 mins.)

2Serve omelette topped with watercress.
