  • 1 lb. ground beef
  • 1 doz. corn tortillas
  • 1 can chopped green chilies
  • 8 oz. mild Cheddar cheese
  • 1 can cream of mushroom soup
  • 1 medium onion (optional)

    Brown ground beef. Add onions and cook for 2 minutes. Mix cream of mushroom soup, 2/3 can of milk (about 7 ounces) and chopped (diced) green chilies in a bowl. Grate Cheddar cheese. Next, cut or tear 1 dozen corn tortillas into 2-inch squares and place a layer of tortillas in bottom of small oblong or 8-inch square ovenproof baking dish. Top with 1/3 ground beef, 1/3 soup mixture and 1/3 cheese. Repeat layers 2 times. Bake at 350° for about 25 minutes.
