Ingredients

  • 2 cups frying oil
  • 1 2/3 lb baking potatoes, peeled and cut into chips (french fries)
  • 3/4 cup all-purpose flour
  • 2/3 cup cornstarch
  • 1/2 tsp baking powder
  • 3/4 cup beer
  • 1 1/4 lb cod fillet, cut into portions
  • None None lemon juice or malt vinegar, to serve

Directions

    Heat the oil in a pot to 300°F. Add the chips in batches and fry for 3 mins. Remove from the oil and set aside to drain. To make the batter, beat together the flour, cornstarch, baking powder and beer until smooth. Season with 1 tsp salt.

    Heat the oil to 350°F. Dip the fish portions in the batter then deep-fry for 5 mins. Remove and keep warm. Re-fry the chips for 4 mins. Remove and drain. Season the chips with salt and the fish with lemon juice or vinegar.
