  • 2 cups canned salmon tuna or m
  • cocktail sauce optional
  • 1 cup mashed potatoes cold
  • 1/2 cup minced onion
  • 2 teaspoons lemon juice
  • 2 eggs beaten
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup all purpose flour
  • 1/2 cup oil

Directions

    Combine first 7 ingredients, mix well.

    Shape into 8 patties.

    Dredge in flour, fry fish cakes in hot oil about 10 minutes or until brown, turn once.
