Fish Cakes

  • 750 grams white fish fillets, e.g. haddock, hake, cod, etc....
  • 1 1/2 tsp salt
  • 1 medium onion, roughly chopped
  • 2 tbsp oil
  • 1 large pinch of white pepper
  • 2 tbsp chopped fresh parsley
  • 1 large egg
  • 1 tbsp water
  • 3 tbsp dry white breadcrumbs, for coating
  • 1 oil, for frying

    Wipe the fish with damp kitchen paper.

    Sprinkle the fish with the salt and leave in a cool place for 30 minutes.

    Cut the fish into pieces and mince with the chopped onions.
  4. 4
    Mix together the oil, pepper, parsley, egg and water in a large bowl.

    Add the minced fish and onion and the 3 tablespoons of bread crumbs and mix very thoroughly.

    The mixture should be stiff enough to hold its shape; if note, then work a little more water or more breadcrumbs if necessary.

    With wet hands, form the mixture into balls, then flatten them a little.

    Coat the fish cake with breadcrumbs and refrigerate until ready to fry.

    Heat enough oil to cover the base of a frying pan and when it's sizzling hot, fry the cakes in batches for 5-6 minutes each side until golden and cooked through.

    Serve hot with chips or creamed potatoes, or cold with salad.
