- 1 lb. filet of sole, diced
- 2 medium potatoes, grated
- 1/3 c. butter, melted
- 1/3 c. flour
- 2 c. milk
- 2 tsp. salt
- 1/8 tsp. pepper
- 2 small onions, grated
- 2 diced pimentos
- 1/2 lb. grated Swiss cheese
Directions

1Mix butter, flour, salt, pepper and milk.

2Cook until smooth and thick.

3Stir in cheese, reserving 1/4 cup for topping.

4Stir in onion and pimentos.

5Alternate layers of potatoes, fish and sauce in buttered casserole.

6Sprinkle remaining 1/4 cup cheese on top.

7Bake, uncovered, in 350° oven for 45 minutes or until top is brown.

8Serves 6.
