  • 1 lb. filet of sole, diced
  • 2 medium potatoes, grated
  • 1/3 c. butter, melted
  • 1/3 c. flour
  • 2 c. milk
  • 2 tsp. salt
  • 1/8 tsp. pepper
  • 2 small onions, grated
  • 2 diced pimentos
  • 1/2 lb. grated Swiss cheese

Directions

    Mix butter, flour, salt, pepper and milk.

    Cook until smooth and thick.

    Stir in cheese, reserving 1/4 cup for topping.

    Stir in onion and pimentos.

    Alternate layers of potatoes, fish and sauce in buttered casserole.

    Sprinkle remaining 1/4 cup cheese on top.

    Bake, uncovered, in 350° oven for 45 minutes or until top is brown.
