- 1 lb. haddock fillets
- 2 c. water
- 1/4 c. chopped onion
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1 tsp. salt
- dash of pepper
- 3 diced potatoes
- 1/2 c. evaporated milk
Directions

1Boil 2 cups water and add the fish.

2Simmer for 15 minutes. Remove fish and save the liquid.

3Saute onion in butter.

4Add flour, salt and pepper.

5Heat until bubbly, then add fish liquid and 1/2 cup water.

6Add potatoes and simmer, stirring occasionally for 10 minutes.

7Stir in the fish and milk.

8Simmer 5 minutes more.

9Do not boil.

10Serves 6.
