- 1/2 c. salt pork, diced
- 1/4 c. sliced onion
- 3 c. sliced potatoes
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 c. water
- 2 lb. lean fish
Directions

1In a heavy kettle, fry pork to a golden brown color.

2Add onions and fry to a light yellow color.

3Add potatoes; sprinkle with salt and pepper.

4Add water; cook until potatoes are about half done.

5Add fish, flesh side down.

6Cook until potatoes are done (soft).

7Remove any skin from the fish and break the flesh into coarse flakes.

8Serve hot.
