Fish Chowder

Ingredients

  • 1/4 c. diced salt pork
  • 3 medium size onions, diced
  • 4 large potatoes, pared and cubed
  • 2 c. water
  • 2 lb. skinless scrod or cod fillets
  • 2 c. half and half
  • 1 c. milk
  • 1/4 c. butter
  • salt and pepper to taste

Directions

    Saute salt pork and onions in large pan.

    Add potatoes and 1 cup water.

    Simmer 5 minutes or until potatoes are tender.

    Place fish on top of potatoes and onions.
  5. 5
    Add remaining cup of water. Simmer until fish flakes easily when touched with a fork.

    Add half and half and milk.

    Stir in butter, salt and pepper.

    Heat through over low heat and serve.
