Ingredients

  • 1 lb. fresh whitefish (any mild variety)
  • 1 large onion, sliced into bite size pieces
  • 1 can tomato soup
  • 3 Tbsp. flour
  • 2 c. milk
  • 2 Tbsp. ketchup
  • 3 Tbsp. parsley
  • 2 cans sliced potatoes
  • 1 bottle clam juice
  • 3 Tbsp. butter (more, if needed)
  • 3/4 lb. shredded cheese
  • 1/2 tsp. dry mustard
  • 1 large can tomatoes (with juice)
  • salt and pepper

Directions

    In a large soup kettle/pan, saute onion 3 or more minutes. Add clam juice and juice from the potatoes.

    Add diced fish. Cook 15 minutes on medium-high until fish is mostly done. Add potatoes and turn heat down to medium-low.
