- 1 Tbsp. low-fat oleo
- 1 medium bell pepper, cut into strips
- 1 medium onion, sliced
- 2 ribs celery, diced
- 2 tomatoes, chopped
- 2 Tbsp. lemon juice
- 2 lb. fresh fish fillets
- salt, pepper and red pepper to taste
Directions

1Saute onion, bell pepper and celery in oleo about 5 minutes. Add tomatoes and cook until tender.

2Add 1 tablespoon lemon juice, salt and pepper.

3Set aside.

4Place fish in baking pan sprayed with Pam.

5Lightly sprinkle with salt, pepper and red pepper. Drizzle 1 tablespoon lemon juice over fish.

6Broil until light brown and fork-tender.

7Spoon vegetable sauce over fish.
