Fish Fillet Roll-Ups

- 1/3 c. butter or margarine
- 1/4 c. lemon juice
- 2 tsp. granulated chicken bouillon mix
- 1 tsp. Tabasco sauce
- 1 c. cooked rice
- 1 pkg. frozen spinach, thawed
- 1 c. shredded sharp Cheddar cheese
- 8 fish fillets (about 2 lb.)
- paprika
Directions

1Preheat oven to 375°.

2Melt butter in small saucepan.

3Add lemon juice, bouillon and Tabasco sauce.

4Heat slowly.

5Set aside. In medium bowl, combine cooked rice, spinach, cheese and 1/4 cup lemon-butter sauce.

6Mix well.

7Divide rice and spinach mixture equally among fillets.

8Roll up and place seam-side down in baking dish.

9Pour remaining sauce over roll-ups.

10Sprinkle with paprika. Bake 25 minutes or until fish flakes.
