Fish Fillet Roll-Ups

  • 1/3 c. butter or margarine
  • 1/4 c. lemon juice
  • 2 tsp. granulated chicken bouillon mix
  • 1 tsp. Tabasco sauce
  • 1 c. cooked rice
  • 1 pkg. frozen spinach, thawed
  • 1 c. shredded sharp Cheddar cheese
  • 8 fish fillets (about 2 lb.)
  • paprika

Directions

    Preheat oven to 375°.

    Melt butter in small saucepan.

    Add lemon juice, bouillon and Tabasco sauce.

    Heat slowly.

    Set aside. In medium bowl, combine cooked rice, spinach, cheese and 1/4 cup lemon-butter sauce.

    Mix well.

    Divide rice and spinach mixture equally among fillets.

    Roll up and place seam-side down in baking dish.

    Pour remaining sauce over roll-ups.

    Sprinkle with paprika. Bake 25 minutes or until fish flakes.
