- 20 oz. spinach, chopped
- 1/2 tsp. lemon pepper
- 1 1/2 lb. fish fillets
- 1 1/2 c. mayonnaise
- 4 1/2 Tbsp. lemon juice
- 1/2 tsp. salt
- 2 or 3 dashes paprika
- 1 fresh lemon, quartered
Directions

1Cook spinach in water to cover until tender, 5 minutes at most.

2Remove from heat and drain thoroughly.

3Spread in bottom of buttered baking dish.

4Sprinkle with lemon pepper.

5Spread fish fillets over spinach.

6Combine mayonnaise with lemon juice and salt; stir to mix well.

7Pour over fish and spinach to coat evenly.

8Sprinkle with paprika.

9Bake in a 350° oven for about 25 minutes until fish is done, not dry.

10Serve hot with fresh lemon quarters.
