Fish Granada With Bananas

- 8 filets of white fish
- 1/8 tsp. pepper
- 3 bananas
- 1/2 c. butter or margarine
- 1/2 c. dry white wine
- 1/2 tsp. salt
- 1/4 c. lemon juice
- 3 eggs
Directions

1Place fish in large skillet.

2Add wine, salt and pepper, lemon juice.

3Heat to boiling.

4Reduce heat and simmer for 3 to 5 minutes or until just done.

5Spoon liquid over fish frequently. Lift fish from skillet gently.

6Place on oven proof platter. Cover and keep warm.

7Reserve 1 c. liquid from cooking fish.

8In top of double boiler, beat eggs until slightly thickened.

9Place over simmering water.

10Add butter; cook stirring constantly 2 to 3 minutes.

11Slowly add reserved liquid.

12Peel and slice bananas, arrange over each fish.
-
13Cover with sauce and broil until golden (about 2 minutes).
