Ingredients

  • 1 1/2 to 2 lb. fish fillets (perch, red snapper or cod, etc.)
  • 1 c. chopped, fresh tomatoes
  • 1/2 c. chopped green pepper
  • 1/2 c. diced onion
  • 1/2 tsp. garlic powder or 2 cloves, minced
  • black pepper to taste
  • 1/4 tsp. dill weed (optional)

Directions

    Tear large enough piece of foil to envelope fish.

    Place fish on foil.

    Top with tomatoes, green peppers, onion, garlic, pepper and dill weed.

    Place foil pouch on baking sheet.

    Bake at 350° for 20 to 30 minutes or until fish flakes easily with a fork. Makes 6 servings.
