Fish In Wine Sauce

- 2 lb. flounder or other fillets
- 3 tomatoes, sliced
- 2 Tbsp. flour
- 2 Tbsp. melted butter
- 1/2 c. skim or buttermilk
- 1/3 c. dry white wine
- 1/2 tsp. basil
- plain bread crumbs
- parsley, chopped
Directions

1Place fillets in a single layer in baking dish.

2Arrange sliced tomatoes over top of fillets.

3Blend flour into butter in saucepan.

4Add milk gradually and cook until thickened, stirring constantly.

5Remove from heat and stir in wine and basil.

6Pour sauce over top of tomatoes and fish and add crumbs.

7Bake at 350° until fish flakes easily when tested with fork.

8Sprinkle with parsley before serving.
