Fish In Wine Sauce

Ingredients

  • 2 lb. flounder or other fillets
  • 3 tomatoes, sliced
  • 2 Tbsp. flour
  • 2 Tbsp. melted butter
  • 1/2 c. skim or buttermilk
  • 1/3 c. dry white wine
  • 1/2 tsp. basil
  • plain bread crumbs
  • parsley, chopped

Directions

    Place fillets in a single layer in baking dish.

    Arrange sliced tomatoes over top of fillets.

    Blend flour into butter in saucepan.

    Add milk gradually and cook until thickened, stirring constantly.

    Remove from heat and stir in wine and basil.

    Pour sauce over top of tomatoes and fish and add crumbs.

    Bake at 350° until fish flakes easily when tested with fork.

    Sprinkle with parsley before serving.
