  • 2 Tbsp. flour
  • 1/4 tsp. paprika
  • 1 1/4 c. milk or light cream
  • 1 c. shredded Cheddar cheese
  • grated peel and juice of 1/2 lemon
  • 1 (10 oz.) pkg. frozen spinach, chopped, cooked and well drained
  • 2 Tbsp. finely sliced green onion
  • 6 flounder fillets

    Cheese sauce:

    Melt butter in pan; stir in flour, salt, pepper and paprika.

    Gradually add milk.

    Cook until thick.

    Add 1/2 cup of cheese, lemon peel and juice; stir until cheese melts.
