- 3 1/2 Tbsp. butter
- 3 1/2 Tbsp. flour
- 2 c. milk
- 1/8 tsp. paprika
- 2/3 tsp. salt
- 1/3 c. bread crumbs
- 2 c. cooked fish (any fillet)
- 2 eggs
Directions

1Melt butter, add flour and, when smooth, stir in milk.

2Cook until thickened.

3Add seasoning and crumbs.

4Cool.

5Add flaked fish to sauce and mix well.

6Stir in egg yolks and stiffly beaten whites.

7Put in greased baking dish and bake in moderately hot oven until firm.
